do you like to cook dinner?
or is it your least favorite job as a mom?

i remember sitting at a home kitchen party and hearing the women around me complaining about how much they hate to cook, and that's when i realized i did not.
i liked it.
i like cooking for my family.
it really does make me happy.

BlogHer asked if i would try out a recipe from Hellmann's Real Mayonnaise and Bobby Flay.
of course the answer was yes.

i read the recipe and thought "hmm… i don't think i have ever cooked with mayonnaise. how can that be?"
and "what are turkey cutlets?"

now i was on a mission:
find turkey cutlets and see what it's like to cook with mayonnaise.

i found the cutlets.
they have probably always been there, but i had never heard of them.

and i grabbed the Hellmann's and got busy.

i mixed the mayonnaise and mustard and seasoning together with a whisk.

then brushed both sides of the cutlets with the mixture.

next, i dipped the turkey into a bowl of bread crumbs and seasonings.

i made sure it was completely coated.

then in my skillet with heated canola oil, i added the turkey.

i cooked it for 3 minutes on one side and then flipped it for another 2-4 minutes, until it was crispy & cooked all the way through.

oh my goodness…my kitchen was smelling SO GOOD at this point.
that is something i love about cooking too,
filling the house with the smell of our favorite foods.
i love hearing my kids walk in and sniff and say "ARE WE HAVING LASAGNA??!!" with a big smile.

while the turkey was cooking, i started on some potatoes.

and some asparagus on the inside grill on my cooktop.
just recently my friend taught me how to make it this way…i am so grateful.

and in 15 minutes…this meal was ready.
i couldn't believe it.

i tasted the turkey…a bit unsure since i had never had it before. (i have had turkey, just not turkey cutlets.)

Hellmann's Mayonnaise made the turkey juicy and crispy!
it was seriously good.

this recipe is EASILY a new family favorite.

A Bobby Flay Recipe

Prep Time: 15 minutes Cook Time: 10 minutes 4 servings

2 cups panko or plain dried bread crumbs

3 Tbsp. finely chopped fresh flat-leaf parsley

Salt and freshly ground black pepper

1/4 cup Hellmann'sÆ or Best FoodsÆ Real Mayonnaise

2 Tbsp. Dijon mustard

1 tsp. poultry seasoning

4 turkey cutlets (about 1/2 inch thick)

4 Tbsp. canola oil, divided

Combine bread crumbs, parsley, salt and pepper in large shallow dish; set aside.

Combine Hellmann's or Best Foods Real Mayonnaise, mustard and poultry seasoning with wire whisk in small bowl and season, if desired, with salt and pepper.

Season turkey, if desired, with salt and pepper. Brush 1 side of each turkey cutlet with mayonnaise mixture, then coat in bread crumbs.

Heat 2 tablespoons oil in 12-inch nonstick skillet over medium- high heat and cook 2 turkey cutlets, bread side down, 3 minutes or until golden brown and a crust has formed. Turn over and cook an additional 2 minutes or until turkey is thoroughly cooked. Repeat with remaining oil and turkey.

barely….

this week is trying to bury me.

and because of that….you know stuff will happen like your freezer will break.

this is katie's print i just bought…..and looooove the happiness of.

i set it in front of the kids and we studied the detail she used on her turtle:
the separate squares on the shell….the eye….the claws….the un-squareness of the "squares"….
and then we each drew one and painted it with water color.

i was REALLY cranky and knew that if i sat down and drew and painted it would help.
i took a loooong time on mine.
slowly like a turtle.

my kitchen is CRAZY messy.
there were 8 kids at my house today.
our sewer line backed up and the drain guys are here.
four people rang our doorbell today….so far.
usually weeks go by without anyone. 
this day feels a little bonkers.

i made…..
coffee.
my brain does not function well in the morning.
breakfast and me don't usually mix.

he plays so much basketball he hardly ever reads.

lauren read almost the entire time.
i read magazines and pottery barn and Boden.  :)

in honor of the birds…..

craft thursday = robin style

this craft was found via the crafty crow….like so many of my great ideas….she finds them first for me.

we started with paper plates and paint.

we had those really heavy duty chinet plates….they worked awesome for this craft!

we painted half of the plate "sky" blue and the other half "nest" brown.

then we used A LOT of school glue and began fluffing our nests.

we used brown packing shredded stuff that i have had for a long time.

and sticks from the sidewalk….

i cut out some birds that were free hand….just a random bird shape.
we added a red belly.
and glued it on to the bird shape.

then they cut out eggs from blue paper left over from the owl craft last week.

when they were done….i helped with the most important step.

i COVERED the nest in glue.

COVERED.

i used a ton of glue on top of everything they made and let it sit over night to dry.

it worked!

cardis, pink glitter and oprah

to try to celebrate the end of my school-year-of-freedom…..my friend and i went out for shopping & lunch.
we are good at that.
we do it well.

i went a little wild with the cardis at target.

it is a wardrobe staple and i was out.
so i restocked.
before i went into the dressing room….i took my size in every color because they seem to be running low.
by the time i came back to put some back and make decsisions…the rest were gone.
of course there were the XS and S but i wore that in 6th grade.
i just thought it was funny.
i was not the only one who was cardi crazy yesterday.

and we went to sam's club to look for a new trampoline….and i left with a dress for annie instead…..

i decided that summer should be brought in with neon pink nail polish with glitter on top….$2 at target.

it's my way of saying "summer….i accept you with open arms…..even though i already miss the quiet house"

so did you watch the oprah farewells???

Oprah_winfrey

i have always had oprah on the dvr in my bathroom.
i could see what was on….decide if it was interesting…..watch or delete.

and now it's over.
as much as i disagree with some of oprah's beliefs….i have to give her credit.
she is amazing.
and she is generous.
just to know where she came from to where she is now.
and to know that she changed our lives….SHE DID.  
people treat each other differently than the previous generations…they know how to communicate more clearly because of oprah and her guests…..dr. phil….dr. laura berman….to name a few.
she talked about issues that no one would.
she brought things out of the dark.
she was not afraid to do hard things and ask hard questions and get to the real issue.

really she IS in everyone's world….everyone knows her name and what she stands for.  
what an accomplished life she has led so far!
 
so that's all i wanted to say.
i wanted to acknowledge that she is a truly strong and special person.
and i am so glad that i got to watch her on tv for 25 years.
i can't imagine anyone that could replace her.
and if i am being honest….i will really miss her show.
