my feast of goodness cookbook.
it’s a cookbook from the church craig and i were married in….made in the 90’s.
it’s one of those that all the women of the church submit recipes for as a fundraiser.
it has been well loved.
it’s a mess….dirty, crumpled, pages falling out.
i left it on a hot burner once and the cover is burned!
on page 56 is Judy Schroeder’s Meatballs.
yum.
i have been making this meal for 15 years.
i don’t know who judy schroeder is.
but i thank her for this wonderful meal.
you will need this ……and brown sugar.
now….you can’t make this meal without getting your hands dirty.
everything goes in a bowl and you mash it up.
i have always used my hands.
if you want to take your time with a spoon….that is up to you.
i can’t imagine it working though.
my hands have always been what i use.
i guess you could wear gloves.
i don’t.
it’s slimy.
mix it up till it looks like this.
then you make them into meatballs.
i should have had 24 but i ended up with 25.
just make it fit.
(it is killing me not to mention anything about pete schweddy right now…..)
put in your oven at 350 for 30 – 40 minutes.
while it’s cooking you make your bbq sauce.
super easy.
take the pan out of the oven and put on the sauce.
i just put one spoonful over each meatball.
of course….i have to leave a few without sauce….for the picky eaters.
then you put it back in the oven for 10 minutes until it’s bubbly hot.
and that’s it.
we ALWAYS have mashed potatoes with this dish.
and i feel weird that there is nothing green on this plate.
i also feel weird wearing heels and white pants while holding a plate of meatballs!
is this weirder??
smiling AT the camera with a plate of meatballs?
the point of making this meal was to make craig smile.
he did.
he walked in the door and smiled and said “OHHHH! it smells goooood in here!”
exactly what i wanted to hear.
annie threw a major fit about having to eat a meatball
even after i had made it without sauce JUST for her.
she. threw. her. Β meatball.
do you think june cleaver had to deal with that?
****update!!
catsup is ketchup.
my grandmother always pronounced it catsup…so i didn’t even think to mention what it was.
yes….catsup IS ketchup.
π
******second update!
i had just come from church and that is why i am dressed up.
craig stayed for church business at the last service of church so i was able to prepare
“sunday dinner” the way he grew up with…and loves.
i don’t usually deck out in jewelry and white pants to make saucey meatballs.
but i wanted to still look cute when he got home.

christine - Super-yum! This looks just like a dip I make for baby showers and get-togethers. Always a fave. If I have leftovers (or if I’ve doubled the recipe and held some back), I will use this the next night for dinner. Heat up, thin down with milk or half & half, toss with penne pasta and grilled chicken. YUM!
Amy Jo - Woo-hoo! This was delicious, and it came just in time for me to take to mom & dad’s for Christmas! Thanks!!
Rachel J - Hey Meg!
This is my all time favorite dip! When I was in highschool, a group of girlfriends got together every Christmas and had a little party with a grab bag gift. We took pictures and ate lots of food and now that we’re older and living apart with grown up lives the party still goes on. Sadly I am the only one not living in the Chicago area anymore and so they make my spinach artichoke dip in my memory. I love it best with tortilla chips, but hawaiian bread makes it pretty yummy too!
I so enjoy your blog and pictures of your life. May God bless you and your beautiful family this Christmas and all thru 2011.
jennifer - So I decided at the last minute that I HAD to make this and take it with us to a party we went to last night. I’m so glad that I did because it was absolutely delicious! Thanks for sharing the recipe.
Lorri - I am reading Wichita Thunder and thinking hey I know that hockey team, my buddy AJ Gale from Nanaimo, BC plays on that team. I watched him play junior hockey for 3 years here. Hope you truly did enjoy the game. Merry Christmas to you all.
Alicia - Is YUMMO sufficient enough! Happy Holidays!
Wendy - Try it with a good loaf of warm french bread! Just tear off pieces, dip it, and enjoy =) It’s the absolute best way to eat it YUM!
emily - mmmm … i’d really like some right now.
Traci - I make this EVERY year, and it’s always a hit!
Lisa - I make a similar dip, but I can’t do miracle whip, it has to be Best Foods mayo for us. It’s also really good w/ slices of bread, toasted in the oven, yum yum! Tonight we had the cold spinach dip(made w/ Knorr veg. soup mix) for dinner!! One of my daughters said to me, “why is dip sooooo good?” lol…I told her it’s becuase it’s a bunch of bad food all smooshed together and then dipped into w/ more bad food!!! π I love this time of year when having dip for dinner is ok cuz we’re too busy mixing up cookie batters!
Gina - What are the measurements for the ingredients? This looks like a wonderful thing for me to make at Christmas!
Tanya H - We make one very similar! π Try it on slices of baguette, toasted and brushed with butter and broiled for a minute. π mmmm! Now I’m all hungry…
Julie - Love this. I make a similar one, totally gag as I scoop the mayo in (IT IS SOOOOOOO GROSS AND STINKY), then put it out of my mind that it is even in there. Because when it comes out of the oven all bubbly and awesome. I die. But, so trying it with spinach next time. ANd lots of garlic.
shannon - mine is just like this but with a lb of jump lump crabmeat and a 1/2 tsp of cayenne! yummmmmmm.
Trish - my fav!!!
TAB - Yummo!
Trina McNeilly - This is one of my favorite recipes!!!!! I make this all the time!!! Yummy!
bobbie - I’m such a dork. When I read “choke it up”, I thought that was the real artichoke terms for chopping. I was giving you major chef credits… then it turned out to be a typo. Very funny! I’m going to go drink more coffee now, obviously I need it.
Lynda@Me and My Pink Mixer - I just made a very similar recipe for our Christmas party last weekend and it was gone fast! I roast the artichokes in the oven first with a little olive oil, salt & pepper ~ it really brings out the flavor. I also top mine with mozzarella cheese ~ wish I had some right now! I love your Christmas plates ~ so cute π
Becky @ Farmgirl Paints - OH MY Goodness!!!! YUMMY…thanks:)
josie - This is absolutely the best dip. I love that it can be prepared ahead of time and just put in the oven, esp since I have to make 2 pans of it. One for Christmas Eve and Christmas Day.
Happy Holidays!
Lori McDonough - we top ours with shredded mozzarella and it melts in the oven…yum!
Sugar Mama - I found some artichoke and jalapeno dip at Costco…. it’s amazing! I love this kind of food (a little too much)
Anna Marie - My husband is going to love you for this one. He is ALWAYS wanting to get spinach and artichoke dip as an appetizer when we go out to eat.
deborah@applesinwonderland - dangerously good. i have some issues with portion control. this looks like it serves more than one? seriously yummy;)
Casey - I use a variation of this and it is indeed, delish! You can also use celery stalks to dip instead of chips to make it more carb friendly. I’m not saying that’s my favorite, but it is good!
Amber Pamper - yummy!! π
Kimberlee J. - A total favorite at Christmastime (or anytime) here. Every year we sit on the couch, watch Love Actually, and pig out on this dip after our kids go to bed! Love!
Hoosier at Heart - Oh man oh man, that looks delish! Thanks!
Tess S - always a favorite in this house. (party or not!)
Holly - ok so how perfect is your timing!? I am going to make this for a lunch thing on monday for sure! Thanks!
Ruth - oh my. it’s only breakfast and i want this already. dare i face the insanity of supermarkets again this week??!
Leonie - Hey Meg…. this is huge hit is Aus….. I will email you a few more recipes similar… another great way to serve this is in a cob loaf…. cut the top off remove the inside bread put aside for toasting, put your dip inside and cook for same time but for last 10 mins on a tray put bread, broken into bite size pieces spray with some olive oil and put them in the oven too….. Delicious!!! great bbq food here… I have a wonderful Artichoke dip too…. OMG its the perfect cold weather dip! I’ll get back to you
Leonie
Amber Filkins - That is so yummy with chunks of bread. Mmmmmm
valerie - Okay, that looks like something I must make because anything with sour cream and cheese and more cheese….is my kind of food!
