fondue party

every year craig’s side of our family has a fondue night at christmas.
like… craig’s WHOLE life.
kind of a fun traditional that i am glad they still keep up.
several people on IG asked for more information so they could do this with their family.
i will try my best to help you out.
it’s not really MY thing so i may miss some details.
we usually host which means i make sure my house is clean and there is space for every one.
then the other family members bring the food and set it up.

there is usually one pot of oil and one pot of  broth to cook meat.
we have steak & chicken cut into small pieces & shrimp every year.
occasionally there have been chicken nuggets or meatballs too.
then bbq sauce, ketchup, cocktail sauce, A1 and…. i can’t recall what other sauces.
i think you could have any sauce you wanted.

there is always a cheese fondue.
this recipe would work fine or something like it.
we dip bread and veggies into the cheese.
someone cuts the bread into cubes with an electric knife.
this is the place i have a hard time staying away from.
melty cheese and bread.
YUM.

someone makes a caramel dip and a chocolate dip for fruit, marshmallows and angel food cake.
(this is the kids favorite area)

and then everyone brings their christmas snacks from home too like muddy buddies and sugar cookies.
this year i didn’t bake ONE single thing so i purchased cream puffs and eclairs from the freezer aisle.
it counts for something.  🙂

We have all kinds of ways to make this work.
we have an Oster Fondue Pot that gets used every year…varies what is in it though depending on the needs.

this year my sister in law put the chocolate and caramel in her new Crock-Pot Hook Up Connectable System.
i totally want to get that system!
amazon seems to be out of reasonably priced crock pot hook ups to link to but i found them here at walmart.

the cheese dip was in a ceramic dish on a Hot Plate.
it works!

we have LOTS of Fondue Forks  to keep track of which food is yours.
although some people still like to steal your meat if you don’t get to it quick enough.

You want to make sure that cords are out of reach from children to avoid burns… obviously.
we have even taped down cords in the past before we had an island with electrical outlets.
safety first for all of your guests.

Sue Linse - We also do Fondue every Christmas day. Have tried to do it at the table, but too many people so I want to try the island idea. For meat sauces, we also have honey mustard, horseradish sauce and teriyaki. For the chocolate fondue, we include maraschino cherries, pound cake and clementine oranges. Fun tradition.

Amanda - Small Home Big Start - So much fun!! We do cheese fondue every couple of years for my brother and sister’s birthdays in December. My fav things to dip in it are bread (obviously), sliced apples and blanched broccoli. The leftover cheese is great cooled in the fridge and then grated over steamed broccoli and cauliflower as a gratin. Kimberlee Jost - I love this so much. It makes me want all of my cousins to live near me so that I could gather them up for a party like this. Hmmm…maybe I’m going to have to adopt some people. I think I know who and it involves Circles. 🙂

Rebekah - Meg, you needs tripod so that you can take pictures and actually be in the picture and not just show your face at a weird angle!!

Jennifer Andersen - A chocolate fountain would totally fit in there. Love the whole idea. Well done.

Amanda - Our family loves fondue too. It’s the time and conversations that you have that make it such a nice option to a regular meal. We like to end our meal with a round tube of refrigerated biscuits. Take one biscuit and place an unwrapped Hershey kiss and wrap/roll the uncooked biscuit dough around it. Then cook it in the oil fondue (no fork required just drop carefully to not get burned by oil). When done, it is like a doughnut with melted chocolate in the middle. Roll it in powdered sugar or regular sugar. Yummy!

lisa - What a FUN tradition!! All of those choices sound super yummy. My one thing is how do you make sure that the meat is cooked through!!? & that no one eats undercooked chicken? My under-cooked & raw-chicken-sitting-out-at-room-temp-too-long anxiety wants to know!! {sigh – lol!!}

Michelle - i have zero experience with fondue so please forgive my ignorance. Does having to cook the meat cause a big hold up in the movement of the supper line? Also is the meat seasoned with any salt or other seasoning before it’s cooked? this seems like a really fun idea, just trying to wrap my head around the full concept. Thanks!

vanessa schroeder - My family used to do this but sitting around the table. If your piece of food you dipped into the pot fell off the stick we had to give the family member on our right a kiss on the cheek! Sometimes we got Grandma & Grandpa to approve hugs as the cousins got older!

Kelly - We got SMART this year after learning from a chaotic celebration last year and since a bunch of family lives in town we split up the “kid present night” from the “grown up present night”. We got a baby-sitter and my mom treated us to million dollar spaghetti, a terrific salad, rolls, etc. and caramel fondue for dessert. We used to do that a lot as teenagers in our house but hadn’t had the fondue in ages. I thought the cream puffs in your photo were one of our favorite dippers at first – the toasted coconut covered marshmallows! Super yummy! I know it is over the top but I also like brownies dipped in fondue. Angel food cake is probably my favorite though so yay for that! Fun tradition! Kelly

chrissi - we were just talking about having a fondue party. your party looks like so much fun. reminds me of growing up with lots of cousins and kitchen chaos. the best kind of memories.

Julie - Yum – my first and only cheese fondue was tried in Switzerland many years ago. Such a fun way to eat. I have to ask though, what is a muddy buddie?

Janel - I love love to do Fondue… Another fun alternative
is using a Raclette Pan. You can even find Raclette cheese for this very purpose. You basically grill thinly sliced potatoes on top and underneath the grill you melt your cheese in single serving pans. When the potatoes are cooked and cheese melted, you plate your potatoes and pour melted cheese over top and eat. Repeat repeat repeat…

I have done thinly cut meats and veggies to change
It up. What I haven’t done yet is fruit..I think that would be fun!

I purchased my Raclette pan on amazon
And googled my way thru for the best outcome.

honestly i just want to take a nap when i think about making these things.
why did i buy that dumb squash?

this eating healthy thing is hard.  it’s every single day.
I’m tired and i just want to eat cake.

but i won’t.
i will mash squash.

Anna - I make the hearty chicken stew with quinoa and kalamata olives on the regular. It’s one of our faves!! And if you want to to the super unhealthy, tastes like dessert for dinner direction, go on Pinterest and find the butternut squash, sweet potatoe and sage lasagna. Holy heaven in your mouth.

Rachel - I could live on Butternut Squash soup. Finally figured out that microwaving the squash for a bit before peeling it makes life a lot easier so it might actually be possible to make enough to live on it for the winter now.

And I couldn’t agree more on how time consuming healthy eating is. Especially now that I have a little baby around there never seems enough time. One way we try to remedy this is by making large portions in the slow cooker. Something that doesn’t need attention and last us for many meals.

Kay - I make a butternut squash soup that you might like. Basically the butternut squash is the base soup with ham, green beans, corn, carrots, and sweet potatoes and seasoned with dill. It’s really good!

Lisa - I eat it all the time, it’s so yummy…in fact I have two on my counter from my garden waiting to be cooked….the easiest is just to roast w/ olive oil, salt, & pepper, so yummy! I also like to make soup. I roast it first and then make it into soup, it gives it a little extra flavor. It’s also good on salad (roasted first) w/ goat cheese, avocado, fresh spinach, & red onion,. I love the recipes you posted, I might have to try one of those this week!

Jen - You’ve inspired me! I don’t know if I have ever even touched a butternut squash, let alone make a recipe with it. I am making the Butternut Squash Ricotta Stuffed Shells for dinner tonight. They sound yummy!

Tammy - I do all homemade baby food for my one year old and she eats a lot of squash! i just started making the squash, sweet potato, apple mix and she likes it.

Lela - Omg I had. Pizza the other night at Broadway Brewery in Columbia, Mo that has roasted butternut squash, bacon, carmelized onions, and cheese. Delicious!

Jenny Logan - We make “fries” with butternut squash. We just cut them to look like fries, drizzle olive oil on them and out salt and pepper on them. Then bake at 350* until done (time depends on how many and how thick you cut them.) you have to watch closely though because they will burn easily. Even my pickiest eater loves these!

Library Momma - Stuffed shells. Here is a super easy way though. Wash the squash, cut in half, scoop out seeds, oven 400 degrees for one hour. Scoop out cooked squash , mix with a small container of reduced fat sour cream, with a little nutmeg, scoop into cooked shells, cover with reduced fat Alfredo sauce and cheese, back into the oven 350 degrees for 35-40 minutes until warm and toasty brown. Easy, delicious, and somewhat healthy!

Jennifer - Make the soup! My grocery store had a sample of butternut squash soup and I tasted it, and bought my first squash to go with the recipe they were handing out. (mine says to add an onion and an apple as you roast it) I can’t even get over how good this soup is. And, I don’t like squash. At all. But this soup!!

Becca - I think it would make a lovely centerpiece for Thanksgiving.

It’s SOOOOO good!! You can check out my IG feed (glutenfreewithglee) to see what simple changes I made. I just posted about it last week. I wouldn’t do all 4 squashes they suggest because it does make a lot, but it’s totally worth it. Your family might love it. It’s weird to look at, but the taste is phenomenal and I don’t think it tastes what you might think squash to taste like.
P.S. I just use bacon instead of pancetta. We usually have that on hand, so I don’t have to mess with finding that.

Beth ann - Ashley Ann, from Under The Sycamore just posted a recipe for Butternut Squash Soup on her blog, I was inspired to purchase my first ever whole butternut squash to try it this weekend. Along with a Lasagna Soup. Because soup and snow go hand in hand.

Janet - Butternut squash soup-smooth and creamy (blended with an emulsifier). Served with a nice crusty bread. Doesn’t take too long to make. MMM–just the best on a cold winters day.

Ashley - Hearty chicken soup with bsquash and quinoa at the bottom is delicious! Even my kids ate it! And it freezes well.

Peta - Roast small cubes drizzled in olive oil. Add to a salad of red onion, rocket (arugula?), beetroot and roasted hazelnuts. Drizzle with balsamic vinegar. Yum.

DLG in Mich - I agree with the others who suggested cubing it and tossing it with olive oil, salt and pepper. Roast in the oven at 400 turning once until browned on the edges. I make an enchilada casserole similar to the one linked above. It’s really good! Enjoy…

I just made the chicken butternut quinoa stew and it is delicious! With the left over squash I diced it, tossed it in a pan with beef broth and cooked like mashed potatoes until tender. Some salt/pepper and coconut milk in the food processor. Yum! Can’t wait to see what you made!

Beth - I like to throw my squash in the crockpot with a little water for a few hours until fork tender. Let it cool, cut it in half, and scoop instead of peel. Unused mine like it was pumpkin. You are so right about eating healthy being a lot of work!

Jen - The Hearty Chicken Stew from Cookin’ Canuck is delicious! I’ve made it several times, with & without the olives. The chicken thighs and fresh parsley are a must. So good!

Julie - I do the halved, olive oil, salt, pepper, cut side down on foil lined pan and roast 1 hour at 375- degrees, but I toss cloves of unpeeled garlic in a bit of oil and roast them at the same time–inside the cavity of the squash (where the seeds were). Delicious! The garlic gets so mellow and yummy! The squash caramelizes wonderfully to be eaten plain, or used in whatever—even chilled on salads.

Julie - Butternut pumpkin/squash is my favourite, so sweet and easy to cut and skin. This cake recipe is fabulous for using up pumpkin and so yummy too.

chrissi - i have to hide squash in my house. people shudder at the sight of it …. so i sneak it in fritatas (great),roast it to add in salads, chop it, steam it and saute it with apples and kale and a bit of cinnamon (love) or add it to pasta with olive oil. the haters have no idea and eat all of it. enjoy!

cindy b. - I think the butternut squash, apple and sweet potato casserole sounds good! if you need to cut it raw, put the whole squash in the microwave for 4-6 minutes, let cool to handle and then cut and peel – makes it much easier. let us know what you make!

Even without the cheese its amazing! I think its the red onions that carmalize and the vinegar. SOO sooo good. Its on my Thanksgiving Menu this year since my husband and i loved it so much.

Also I wear gloves when working with butternut squash, I got a contact rash from it. Felt like i had elmers glue all over my hands and it took a few days to go away. I dont think it happens to everyone but better safe than sorry if the flesh irritates your skin.

Kori - I just had a butternut squash soup the other day that was terrific. It had a hint of curry flavor that went really well with that just barely sweet flavor of the squash. Mmmm…and we topped it with sour cream – delish! I’m really tempted by the frittata though…that looks SO tasty!

Meredith - I have been buying them recently. Cutting in half, souping out seeds and put flat side down on a cookie sheet and baking till soft. Then scrape out of skin with a fork. We eat it with meatballs and tomato sauce. I will have to try some of these above. They look amazing.

Kirsten J - Well, you poured your heart out in that Liberia post. Truly. That seemed like so long ago, and I remember following your tweets when you were there, and then Ebola really busted into the headlines. Too close for comfort.
Squash? Not so much for me. I really don’t like that hint of sweetness. Although my family loves it, and I suppose I should try cooking it. I’ll bet some of those recipes are great, and to this day, I still remember really enjoying this squash ravioli at my brother’s wedding rehearsal dinner…..and at a luncheon once, I was served squash soup and it was truly the best. Now you’ve inspired me to try cooking it – let us know what you make!!!

Christy - I used it for spaghetti instead of pasta, great texture. The suggestions above look delish. The stuffed shells or quesadillas would have my vote.

hungry.

this weekend we had all the kids gone and we celebrated Craig’s 40th.
it was pretty wild… we washed windows, gathered a trailer of trash, unpacked boxes, got take out once and watched shows on the DVR.
40 year olds know how to party.

honestly though… i am e x h a u s t e d.
moving is gosh dang hard.
physically yes and mentally too and then emotionally too because everything is different and sounds different and looks different and is a mess…. and then i get emotional.  in a very cranky kind of way.  the kind where i go out of my way to the gas station to buy crazy overpriced peanut butter m&ms and emotionally eat two bags alone in my car crying.

so instead of listening to me complain about that stuff… let’s think about what we should have for dinner or breakfast this week?

Megan - We are moving this weekend! Small stuff in our cars on Saturday and Sunday, official “movers” on Monday. I’m excited and nervous. It’s not a far move in terms of distance, but it is far in terms of lifestyle change for us. Kids sharing rooms, only one full bath, no air conditioning…deep breaths. This is what I wanted and signed up for. Lots of green space, less suburban congestion, more time together.

Lorie - That Southern chopped salad looks yummy! A restaurant here has a mexi-cobb salad that is similar. I think I know what I have having for lunch tomorrow!

Jenny B. - I don’t know how you feel about deep frying things, but my husband deep fried brussels sprouts this week, and they were SO GOOD. He didn’t do anything to them (no batter). He just cut them in half (fresh, raw) and dropped them in the Fry Daddy. I think he probably salted them when they came out, but I don’t know. Anyway, they were delicious! 🙂

Jenny B. - Thank you, Meg! I am not glad at all that you are exhausted and struggling emotionally, but I am glad to know that I am not the only one who breaks down when things get overwhelming. Change is HARD. Wishing you love, joy, peace, patience, kindness, goodness, faithfulness, gentleness, and self-control… and rest. 🙂

Colleen - SAlmon…. fillet, boneless, preferably wild alaskan. Heat gas grill to hot temperature, place salmon skin side down then turn grill down to medium flame. Prior to placing on grill marinate in cheap white wine, then place a coffee cup of white wine on top of grill with a brush ( have another glass of expensive white wine for yourself while doing this)
Intermiteently and frequently brush the salmon with the now warm wine on top of the grill while you enjoy your own glass of wine. The more basting the better the outcome. Do not flip! Cook until the salmon turns white on the top and the fat bubbles. and there is no pink inside ( unless you like it rare.. not me)… 10 to 20 minutes or around when you are done nursing your own drink.. depending on temp of grill.
This makes a very moist wonderful salmon that both my kids ( picky) enjoy… always!!! This is my dad’s grilling recipe and how to that I will remember forever and always think of him when making it.

Mickie - I’ve been watching your move and gaining some courage as we are about to do it again too. We were only in this house for 3 years but I just needed to move back to where I have some trees around me (among a few other things) so… here we go! So, even though you are feeling emotional (and I get that)you also inspire courage. And, I’ll bet Kimberlee Jost could make a mean salmon. Or, the next time you are at RedRock, try theirs. It’s my favorite!

Tiffany - You have quite the palate there Lady. My choices are all deep fried and of the pub menu variety. Not so good good for my over 40 thighs. Tell Craig, Welcome to the 40 Club!! We party HARD (not so much). Idea for you, plan a celebration weekend for when the house stuff is all over, it’s nice to have something to look forward to.

Wendy C - Our last move was 4 years ago and there is still that one tub in the basement of things that haunts me. The items that never found a home in the new house but I couldn’t bear to part with. Stephanie - I hear you on the moving! We’re military and have set up ten homes in fifteen years. It’s not getting easier! I just told my husband that, while I love our life, I might be getting too old to keep moving. It’s hard. BUT it’s always worth it and we’ve had our stuff for a month (today, in fact) and almost everything has found its home. I hope you feel more settled in a month, too! This is my first time commenting, but just wanted to say I was in the same boat as you regarding salmon…it scared the crap out of me….but it turned out to be the easiest and tastiest fish to cook. I just used a small drizzle of olive oil and salt and pepper to season it, then cook it in on a really hot pan skin side down first to get a yummy crispy skin and finish it on the other side…so easy and so yum served with a dill mayonnaise drizzled on top and salad. It is really filling too… Good luck with it and settling into your new place…many good times ahead I’m sure 🙂

Kori - The easiest, tastiest salmon I have had is to brush the salmon with olive oil, then sprinkle with cajun seasoning (to taste, I like a medium bit of spice) and bake it at 425* for roughly 25 minutes. Another way I like it is to brush it with olive oil (no other seasoning) and bake it the same as above, but while it’s cooking, make the Knorr Bearnaise sauce and put it over the salmon when it’s out of the oven.

Oh. My. Goodness. SOOOO delicious!

gina - you always find the yummiest recipes; thanks for sharing. One of the easiest ways to cook fish is to take a frying or saute pan and add a can of broth and a squirt of lemon juice. Bring it to a gentle boil, add fish, and cook for 10 min or so. The fish is cooked when it flakes apart with a fork.

SoCalLynn - That kale pesto veggie pizza is to.die.for. I’ve made it three times in 2 weeks. I only used brie cheese once; shredded parmesan works better actually because the brie gets lost in the baking. I’m going to look at that salad with the cilantro dressing. Looks delicious!

Emily @ DavenportDIY - I grew up in the Pacific NW, so any salmon you get there is amazing. But now we live in Georgia, and I’ve purchased some horrid salmon at the grocery store before. So if you do salmon, start off with some good salmon. Frozen wild caught is better than farmed. But don’t buy thawed wild caught ’cause that can get nasty if it’s been thawed too long. Get salmon from Pacific waters, NOT Atlantic. My 2 favorite ways to cook it are a brown sugar/lemon rub (rub with brown sugar, top with lemon slices) OR cover it in pesto sauce. Then bake ~350 for 20-30min MAX (depends on the size of the fillet too). You want the white fat to just start bubbling out of the top of the fish, or until the fish flakes with a fork. Don’t overcook it. It’s an easy one to cook and is very delicious! 🙂

i am sore… ouch.

so i have done three of the workouts on the 21 Day Fix.
i love how short they are – 30 minutes!
but holy heck my legs are SORE.  wowza.

A bunch of you have asked where to get this program…

i am in a small-ish accountability/support group through facebook that Marta leads and i LOVE that part of it.

AND update… i am not hungry.
there is plenty of food using this plan.
it just doesn’t include nightly large bowls of lucky charms or milkshakes.  (darn)
but sticking to my meal plan (that i made for myself so there is no one to blame but me) has worked.
so far so good!

Necole@seriouslysassymama - I love the sweet potato quinoa patties. Quinoa is one of my favorite things to eat. I am making bourban chicken tonight. The only bad thing in it is brown sugar and a pinch of ketchup. I will be having quinoa with mine, and everyone else will be having rice. Asparagus and broccoli are our veggies. I need to loose 5-7 more pounds, to see if it will help my bum knee.

snow day and a recipe

i have had times where i dread a snow day but i was actually excited about this one.
it was as if we had the time for a break.
that is kind of sad but it is true.  I was caught up enough that i was excited for a snow day.

first off… we made hot chocolate donuts.
snow6this was our recipe….  a boxed cake mix we had in the cabinet.  Two mixes actually.  the marshmallow frosting comes in the box.  and we have a donut pan.   AND a few weeks ago my little girls BEGGED for the Mallow Bits so it was perfectly meant to be on our snow day!donutIMG_3215we each just watched it snow all day long while still in our jammies.  snow3oh these dogs.  they LOVE this stuff!IMG_2680IMG_2707we finally ventured out of the house at 4:00.  it was so beautiful!IMG_2701IMG_2693IMG_2692IMG_2690IMG_2686IMG_2709snow7IMG_2743“HEY MOM!!! we made bread to dip in it too.

ALL of my kids ate their whole bowl….  WITH VEGETABLES IN IT!

you could add broccoli too or other veggies.
i didn’t put the peas in since i knew i pushing it big time with the celery AND carrots in one pot.
but maybe next time they can handle it.

it was delicious comfort food after playing out in the snow.

katey - Oh the snow looks wonderful!!! We are keeping our fingers crossed that Alabama will get at least one snow this year. And the soup looks great!! Will have to try that one because the family can only take Chili and Veggie Beef so many times in one winter. Thanks.

i am very much enjoying the quiet house with the kids back at school.
i say that not because i don’t like to be with my kids but because i have not had any silence since the school break began!
having kids home all day everyday, a new puppy that barks ALL NIGHT LONG in his kennel, not traveling anywhere for christmas to break up the time, freezing cold temperatures…. you get the idea.
i loved the sleeping late and no place to go or be for days and days but after awhile i miss routine of school and a quiet house.
the older i get the more i enjoy quiet.
complete silence.
i have been sitting here for 5 hours now with nothing but the sound of the heater and the dogs breathing deeply.
they needed down time as much as i did.
IMG_2196i made my meal plan for the week.
if i ever get it down in a photo friendly kind of way i will post it.
but right now it’s all messy on notebook paper and scribbles…with my grocery list.

i found lots of new recipes to try…. and of course i want to share with you too!
i am going to try to do this as often as possible.

apparently i like chicken.
next time i will try for some other meats… but i DO like chicken so this is good for me.

i will be putting them to use over the next two weeks in our evening meal plans.
some of them are more for the kids and some are more for me.
tonight we are having #3… i picked an easy one because it’s a ball game night.
(four of the next five nights are ball game nights!     crazytown.)

i have already made the broccoli many times and i eat SO MUCH because it is sooooo good!
who knew broccoli could ever taste so delicious?

Renee - yum yum! glad you’re sharing. i have worked hard the past 3 years to transition into regularly cooking fresh and healthy meals. sometimes i’ve been teaching, sometimes i’ve been having babies. so it’s not like gourmet is my goal here. easy. fresh. yummy.
one trick that works for me is to repeat meals once or twice over the course of 2-3 week. the first time you make anything, it always takes longer and seems more labor intensive. and if it feels hard, you’re less likely to do it again. but if you can make it a couple times in a couple weeks, it’ll feel easier and the people you’re cooking for might like it more subsequent times. their palletes just have to adjust 🙂 ANYWAY, the easier it feels, the more likely you are to start making your ‘go-to’ meals in your repertoire these healthy & fresh ones. (instead of casseroles, and things that involve pillsbury crescents or something.) That was a lot. sorry! good luck!

I made the Broccoli Crack and the No Bake Banana Oat Energy Bars today. Both turned out awesome! The Broccoli Crack was a bit salty for my taste but I ate almost half of it at lunch! My kids LOVE the energy bars (I might have snuck in a little extra stevia :))

Amber H. - I’ve found using an app on my phone works great for meal planning. I use the Paprika one. I can download recipes directly off the Internet or I’ve added my own to it over time. This way when I decide on a recipe when planning my meals I can add the ingredients needed with the push of a button. If you get the app for both your iPhone and ipad (if you have them) then they will interface with each other. No I am not payed to promote this app but yes, it’s my fave app out of any I have on my phone! LOL

I’ve been meal planning off and on for a couple of years now and my week really goes much better when I’ve planned the meals. I know what I need to buy at the grocery store, I have everything I need each day for the evening meal, and there is no last minute scramble to figure out something for supper. Plus, my kids HAVE to know what they are eating for supper BEFORE they leave for school. LOL I don’t know why—I guess they are afraid I might forget to feed them.

KirstenP - Check out this show on CBS on Sat morning 11am Eastern – Lucky Dog. Brandon McMillian helps shelter dogs to kick bad habits, including barking, before they go live with their new families. I know Stanley(is that still his name?) isn’t a shelter dog but his techniques might work with your puppy. Good luck.

I have the BEST recipe for you, and your vegetable-hating kids will love it! My kids can’t get enough of it, and it sounds like they are a lot like yours. Anyway, all you have to do is take a bag of shredded carrots (or shred your own if you aren’t as lazy as I am), toss them with 1-2 tbsps olive oil, and spread them in a single layer on a baking sheet. Bake at 400 until crispy (about 20-30 minutes, depending on the thickness of your carrots). Sprinkle with salt. These taste like shoestring potato chips! The only trick is that you have to watch them at the end, they go from almost cooked to burned pretty quickly. But the burned bits aren’t too bad, either! My kids, 15, 13 and 6, actually ask me to make these.

Kris - Ok chiming in…again…sorry! Try pioneer woman’s italian meatball soup….I bake the meatballs though! Have a big pot on the stove right now! Also try roasted cauliflower….it’s is amazing…and roasted Brussels sprouts with balsamic glaze( I LOVE Pinterest for recipes!)

I have been meal planning for about 10 years. Yes, it’s a pain, but it really helps in the long run. For healthy recipes, check out skinnytaste.com. Her recipes are delicious, but you won’t feel deprived. We love her salisbury steak and cajun chicken pasta! I don’t stock very many pre-packaged foods in our house and I buy organic whenever I can (those pre-washed organic salads blends and spinach at Walmart are a lifesaver)! I also don’t stock the house with things like ice cream, Oreos or soda…not because I never eat those things, but because if they are in the house, I will! And if you haven’t jumped on the green smoothie bandwagon, I highly recommend it! I have one every morning and I can’t tell you how good and energized it makes me feel. And think about adding flax meal to things you already eat–smoothies, yogurt, oatmeal, etc. Good luck, Meg!

I only go back to the store for milk,bread, and apples. We eat a ton of apples. My husband laughed at me the other day because the majority of our groceries are produce. so for now… i will have a salad and dream about enjoying these treats (just a taste) in a few months.

Molly - I’m reading your new posts backwards and I love how you posted this and then posted about your weight loss! Cruel!

Carol s. - I’d definitely reach for the bowl of puppy chow first, but I’m on the low carb wagon for a couple months with decent success. I did have a splurge meal of deep dish pizza, umm three pieces, and a bowl of ice cream with a blessed banana (oh how I miss my bananas) but have been back on the wagon happily since. Someday those sweets will be yours…

Mindy - Oh how I admire your self control when it comes to sweets! I eat plenty of vegetables but I also have something sweet every.single.day. Looking at your lovely pictures has set off my craving for today…you can pray for me if you want : )

Jen - Yum! Those do look good! Proud of you for having willpower though. It’s hard. I just started a food journal for the first time ever a month ago. I am amazed that I don’t eat as much as I thought each day, but am also very concerned about my lack of fruits and veggies. It’s been an eye opener and I’m trying to feed my body with the real food that will fuel it.

Gina - Thanks a lot Meg!! I just started a diet. 😛 Actually, I was thinking about foods to make at Thanksgiving and I thought of a pumpkin cake with cream cheese icing so I pinned that one. And the sweet rolls. Oy! 😉
