turkey!

do you like to cook dinner?
or is it your least favorite job as a mom?

i remember sitting at a home kitchen party and hearing the women around me complaining about how much they hate to cook, and that's when i realized i did not.
i liked it.
i like cooking for my family.
it really does make me happy.

BlogHer asked if i would try out a recipe from Hellmann's Real Mayonnaise and Bobby Flay.
of course the answer was yes.

i read the recipe and thought "hmm… i don't think i have ever cooked with mayonnaise. how can that be?"
and "what are turkey cutlets?"

now i was on a mission:
find turkey cutlets and see what it's like to cook with mayonnaise.

i found the cutlets.
they have probably always been there, but i had never heard of them.

and i grabbed the Hellmann's and got busy.

i mixed the mayonnaise and mustard and seasoning together with a whisk.

then brushed both sides of the cutlets with the mixture.

next, i dipped the turkey into a bowl of bread crumbs and seasonings.

i made sure it was completely coated.

then in my skillet with heated canola oil, i added the turkey.

i cooked it for 3 minutes on one side and then flipped it for another 2-4 minutes, until it was crispy & cooked all the way through.

oh my goodness…my kitchen was smelling SO GOOD at this point.
that is something i love about cooking too,
filling the house with the smell of our favorite foods.
i love hearing my kids walk in and sniff and say "ARE WE HAVING LASAGNA??!!" with a big smile.

while the turkey was cooking, i started on some potatoes.

and some asparagus on the inside grill on my cooktop.
just recently my friend taught me how to make it this way…i am so grateful.

and in 15 minutes…this meal was ready.
i couldn't believe it.

i tasted the turkey…a bit unsure since i had never had it before. (i have had turkey, just not turkey cutlets.)

Hellmann's Mayonnaise made the turkey juicy and crispy!
it was seriously good.

this recipe is EASILY a new family favorite.

A Bobby Flay Recipe

Prep Time: 15 minutes Cook Time: 10 minutes 4 servings

2 cups panko or plain dried bread crumbs

3 Tbsp. finely chopped fresh flat-leaf parsley

Salt and freshly ground black pepper

1/4 cup Hellmann'sÆ or Best FoodsÆ Real Mayonnaise

2 Tbsp. Dijon mustard

1 tsp. poultry seasoning

4 turkey cutlets (about 1/2 inch thick)

4 Tbsp. canola oil, divided

Combine bread crumbs, parsley, salt and pepper in large shallow dish; set aside.

Combine Hellmann's or Best Foods Real Mayonnaise, mustard and poultry seasoning with wire whisk in small bowl and season, if desired, with salt and pepper.

Season turkey, if desired, with salt and pepper. Brush 1 side of each turkey cutlet with mayonnaise mixture, then coat in bread crumbs.

Heat 2 tablespoons oil in 12-inch nonstick skillet over medium- high heat and cook 2 turkey cutlets, bread side down, 3 minutes or until golden brown and a crust has formed. Turn over and cook an additional 2 minutes or until turkey is thoroughly cooked. Repeat with remaining oil and turkey.

angie lilly - I am actually a vegetarian and have been for over 11 years; however, I remember cooking turkeys before making the change. The BEST turkey leftover that I remember was veggie soup. We would take the left over gravy, any left over veggies, and left over turkey that was chopped up and put it all in a crockpot. Cover with water and season with poultry seasonings and cook. WONDERFUL stew!

Denise - We love turkey noodle soup, using the leftovers from our Thanksgiving meal!

Meredith Salmon - I just love the wraps and sandwiches with the leftover turkey and I can eat them every day and night till it is gone. Cranberry sauce and stuffing, mmmmmm can’t wait. I will also have to stop back and see some of these comments to make some of these. This is great!!

Annie - yum! that looks SOOO good. Our families favorite turkey dish, is turkey and homemade noodles with a gravy/sauce served over left over mashed potatoes!

My favorite thing turkey is:
Turkey Lettuce Wraps:
Brown ground turkey with a little ginger and garlic….
add chopped green onions and water chestnuts (you can add more veggies if desired)
1-2 tsp soy sauce
3-4 TBSP of hoisin sauce….
Stir and serve hot
Serve in lettuce (iceberg or romaine)
You can also fry up some rice noodles for some crunch on top!
It literally takes 10 minutes and feeds a lot of hungry kids. And it is healthy!!! But shhhhh…. don’t tell them!!

molly - well in my opinion a deep fried turkey is the way to go…because well why not? After it has fried it must sit for awhile covered in foil in a roaster. Like as long as a football game (we did thanksgiving dinner at our last tailgate) then I love to make little turkey slider type sandwiches with those Hawaiian buns…..yummmmmm-o! oh and I love cooking for my family too:)

I don’t make it with kabobs, I just make it as a stirfry, and BOY is it good! It becomes even more addicting when I serve it over quinoa. Brown rice works well too. YUM!
i’ve used mayonnaise on fish before, but not chicken. I could totally do this recipe!

Open faced turkey sandwich: Layer sweet bread or rolls from dinner the night before (I truly miss waking up Thanksgiving day hearing my Mom shuffling around in the kitchen, making her own recipe rolls for the family), turkey cutlets as prepared above, dollop of mashed potatoes and a swirl of lovely, velvety gravy. Cranberry sauce on the side to taste.
Thanksgiving has always been my favorite holiday. It was often the only time we could get the whole family together. I miss the tradition and the coziness of it. I was raised in Alaska and there was always a chance we would be snowed in on Thanksgiving, so there was a taste of adventure. We would arrive at a relatives house and a line of kids would come skipping through to greet us. I couldn’t wait to hand over whatever ingredient I was carrying from the car and trail off on the end of that train of cousins.

Tracy - This looks SO yummy and I will definitely be trying it soon! My favorite turkey dish is cooking my turkey in a brown paper bag in the oven and never having to touch it the entire day until it has finished cooking – No basting, no nothing! 🙂

Robin Canter - I love to chop up the leftover turkey and make turkey salad with Hellman’s – just like chicken salad. add some chopped celery, salt, pepper and some dill seasoning. Fabulous!

Rach - Wow. I too had no idea these were in the poultry section of the grocery store. I’ll have to look today as I go and buy my 5 lb bag of russet potatoes to make mashed potatoes for a potluck Thanksgiving dinner this afternoon with our neighborhood MOMS Club. And speaking of Thanksgiving dinner, the only Turkey I like to eat (well, maybe until I try this recipe) is a giant roasted turkey with all the trimmings. Yum.
